Ingredients:

  • 4 salmon fillets, 6 oz each
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 lemon, thinly sliced
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat salmon fillets completely dry on all sides using paper towels.
  3. Rub olive oil evenly over the flesh and skin, then season with salt and pepper.
  4. Place fillets skin-side down on the pan and top each with a lemon slice and a pinch of minced garlic.
  5. Roast in the center rack until internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for well-done.
  6. Remove from oven, sprinkle with chopped parsley, and let rest on the pan for 5 minutes before serving.
