Ingredients:
- 4 salmon fillets, 6 oz each
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 lemon, thinly sliced
- 3 cloves garlic, minced
- 2 tbsp fresh parsley, chopped
Instructions:
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat salmon fillets completely dry on all sides using paper towels.
- Rub olive oil evenly over the flesh and skin, then season with salt and pepper.
- Place fillets skin-side down on the pan and top each with a lemon slice and a pinch of minced garlic.
- Roast in the center rack until internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for well-done.
- Remove from oven, sprinkle with chopped parsley, and let rest on the pan for 5 minutes before serving.
