Ingredients

Scale
  • 2½ cups cake flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, room temperature
  • 1½ cups granulated sugar
  • 4 large egg whites
  • 1 cup whole milk
  • 1 tbsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans.
  • Sift together cake flour, baking powder, and salt in a bowl. Set aside.
  • In a large bowl, cream butter and sugar together until light and fluffy.
  • Add egg whites one at a time, beating well after each addition.
  • Mix in vanilla extract, then alternate adding flour mixture and milk, starting and ending with flour. Mix until just combined.
  • Divide the batter evenly between the pans and smooth the tops.
  • Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Cool in pans for 10 minutes before transferring to wire racks to cool completely.
  • Frost with your favorite frosting and serve.

Notes

  • Be sure not to overmix the batter to keep the cake light and fluffy.
  • For added flavor, you can substitute almond extract for vanilla extract.
  • This cake pairs beautifully with buttercream or cream cheese frosting.
