    • 1/2 cup milk
    • 1 teaspoon vanilla extract
  • For the Topping (Optional):
    • 1/4 cup chopped pecans or walnuts
    • 1 tablespoon brown sugar

Instructions

  • Preheat your oven to 350°F (175°C). Grease a 9x9-inch or similar-sized baking dish.
  • In a large bowl, whisk together the pumpkin puree, granulated sugar, brown sugar, cinnamon, nutmeg, ginger, cloves, salt, vanilla extract, and evaporated milk until smooth. Pour the pumpkin mixture into the prepared baking dish.
  • In another bowl, whisk together the flour, sugar, baking powder, and salt. Stir in the melted butter, milk, and vanilla extract until just combined. The batter will be thick.
  • Drop the batter by spoonfuls over the pumpkin mixture, spreading it gently to cover most of the filling.
  • If using, sprinkle chopped nuts and brown sugar evenly over the top of the cobbler.
  • Bake for 40-45 minutes, or until the topping is golden brown and the filling is bubbly around the edges.
  • Let the cobbler cool slightly before serving. Enjoy warm with a scoop of vanilla ice cream or whipped cream if desired.
