Taco Potatoes Recipe - A delicious fusion of crispy baked potatoes topped with seasoned taco meat, cheese, and your favorite toppings.

  • 4 large russet potatoes
  • 1 lb ground beef or turkey
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • 1/4 cup chopped green onions
  • 1/4 cup diced tomatoes (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Scrub and pierce potatoes with a fork, then rub with olive oil, salt, and pepper. Bake for 50-60 minutes until tender.
  3. In a skillet, cook ground beef until browned. Drain excess fat and mix in taco seasoning according to package instructions.
  4. Cut the baked potatoes in half and fluff the insides with a fork.
  5. Top each potato with taco meat, shredded cheese, sour cream, salsa, green onions, and diced tomatoes.
  6. Serve immediately and enjoy!
