  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black beans (drained and rinsed)
  • 1 cup corn (optional)
  • 8 small flour or corn tortillas (cut into strips)
  • 2 cups shredded Mexican blend cheese
  • 1 cup salsa
  • 1/2 cup sour cream
  • 1/2 onion (chopped)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a skillet over medium heat. Cook the onions and ground beef until the beef is browned. Drain excess fat.
  • Stir in taco seasoning, diced tomatoes with green chilies, black beans, and corn. Cook for 5 minutes.
  • In a greased 9x13-inch baking dish, layer half of the tortilla strips.
  • Spread half of the beef mixture over the tortillas, followed by 1 cup of cheese.
  • Repeat the layers with the remaining tortilla strips, beef mixture, and cheese.
  • Cover with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  • Let sit for 5 minutes before serving. Garnish with sour cream, salsa, and cilantro.

Notes

For a spicier dish, add sliced jalapeños or extra chili powder. You can also customize this recipe by adding refried beans or swapping in ground turkey for a lighter version.
