Ingredients

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, sliced

  • 1/4 red onion, thinly sliced

  • 1/2 cup sweet corn (fresh or canned)

  • 1/2 avocado, diced

  • 2 tablespoons feta cheese (optional)

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice

  • 1 teaspoon honey or maple syrup

  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine salad greens, tomatoes, cucumber, red onion, corn, avocado, and feta (if using).

  2. In a small bowl, whisk together olive oil, lemon juice, honey (or maple syrup), salt, and pepper.
