  • 1 onion, diced
  • 3 bell peppers, diced (any color)
  • 2 cups cooked rice
  • 1 can (15 oz) diced tomatoes
  • 1 can (8 oz) tomato sauce
  • 1 ½ cups shredded mozzarella cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.
  • In a large skillet, cook ground beef and diced onion over medium heat until browned. Drain any excess fat.
  • Add diced bell peppers to the skillet and cook for 5 minutes until they soften slightly.
  • Stir in the diced tomatoes, tomato sauce, garlic powder, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
  • Stir in the cooked rice, mixing everything well.
  • Transfer the mixture into the prepared baking dish and spread evenly.
  • Top with shredded mozzarella cheese.
  • Bake for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with fresh parsley before serving (optional).
