  • 4 large eggs

  • 1 cup milk or cream

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 pre-made or homemade 9-inch pie crust

Instructions

  1. Preheat oven to 375°F (190°C).

  2. Heat olive oil in a skillet over medium heat. Sauté onions until translucent. Add mushrooms and cook until softened. Stir in spinach and cook until wilted.

  3. In a large bowl, whisk together eggs, milk, salt, and pepper.

  4. Stir in cooked vegetables and shredded cheese.

  5. Pour mixture into the prepared pie crust.
