Instructions

  • Preheat oven to 350°F (175°C).
  • Heat olive oil in a skillet over medium heat. Cook ground beef, onion, and bell pepper until beef is browned and vegetables are softened. Drain excess fat.
  • Season the beef mixture with garlic powder, paprika, salt, and pepper.
  • In a greased 9x13-inch baking dish, layer the cooked rice evenly on the bottom.
  • Spread the seasoned ground beef mixture on top of the rice layer.
  • Add a layer of diced tomatoes, followed by a layer of corn.
  • Top the casserole with shredded cheddar cheese.
