1 cup creamy peanut butter
1/2 cup unsalted butter, softened
1 cup granulated sugar
1/2 cup brown sugar
1 large egg
1 tsp vanilla extract
1 1/4 cups all-purpose flour
1/2 tsp baking powder
1/4 tsp salt
Instructions
Preheat oven to 350°F (175°C).
In a bowl, beat the peanut butter, butter, and sugars until creamy.
Add the egg and vanilla extract, mixing well.
Gradually add the flour, baking powder, and salt; mix until combined.
Scoop tablespoon-sized balls onto a baking sheet and flatten slightly.
Bake for 10-12 minutes, until edges are set and tops are lightly golden.
Let cool before serving.
Notes
Do not overbake; cookies will continue to set as they cool.
