  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/4 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, beat the peanut butter, butter, and sugars until creamy.
  • Add the egg and vanilla extract, mixing well.
  • Gradually add the flour, baking powder, and salt; mix until combined.
  • Scoop tablespoon-sized balls onto a baking sheet and flatten slightly.
  • Bake for 10-12 minutes, until edges are set and tops are lightly golden.
