  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup enchilada sauce
  • 6 large flour tortillas
  • ½ cup sour cream
  • 2 tbsp chopped cilantro (optional, for garnish)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine shredded chicken, cooked rice, black beans, ½ cup shredded cheese, and ¼ cup enchilada sauce. Season with salt and pepper.
  3. Divide the mixture evenly among the tortillas, roll them tightly, and place seam-side down in a greased baking dish.
  4. Pour the remaining enchilada sauce over the burritos, spreading it evenly.
  5. Top with the remaining shredded cheese.
  6. Bake for 20-25 minutes, or until the cheese is melted and bubbly.
