  • 3 lbs beef chuck roast
  • 1 packet Italian dressing seasoning mix
  • 1 cup beef broth
  • 1 jar (16 oz) pepperoncini peppers (with liquid)
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • 6 hoagie rolls
  • Provolone cheese slices

Instructions

  • Place beef roast in the slow cooker. Sprinkle with Italian seasoning mix, oregano, basil, and garlic.
  • Pour in beef broth and the entire jar of pepperoncini peppers, including the liquid.
  • Cook on low for 8 hours or until the beef is tender and easily shredded.
  • Shred the beef using two forks and mix it with the juices.
  • Serve shredded beef on toasted hoagie rolls, topped with provolone cheese. Optionally, broil the sandwiches to melt the cheese.

Notes

 

For a spicier version, add more pepperoncini or some crushed red pepper flakes. You can also serve the sandwiches with a side of the beef broth for dipping.
