Slow Cooker Cowboy Casserole is a hearty and flavorful dish loaded with ground beef, potatoes, beans, and vegetables. Perfect for busy weeknights or a cozy family dinner, this easy casserole is cooked to perfection in your slow cooker.

  • 1 lb ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 3 medium potatoes, sliced thin
  • 1 cup frozen corn
  • 1 small onion, chopped
  • 1 cup shredded cheddar cheese
  • 1/2 cup beef broth
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  • Brown the ground beef in a skillet over medium heat, then drain the excess fat.
  • In the slow cooker, layer sliced potatoes, browned beef, onion, beans, tomatoes, and frozen corn.
  • Mix beef broth, garlic, smoked paprika, chili powder, salt, and pepper. Pour over the layered ingredients.
  • Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours.
  • Sprinkle cheddar cheese on top in the last 30 minutes of cooking.
  • Serve warm and enjoy!

  • For added flavor, try using smoked sausage instead of ground beef.
