1 lb (450g) boneless, skinless chicken breasts or thighs
1 cup uncooked long-grain rice
2 cups chicken broth
1 cup diced onions
1 cup diced carrots
1 cup frozen peas
3 cloves garlic, minced
1 tsp salt
1 tsp black pepper
1 tsp paprika
1/2 tsp dried thyme
1/2 tsp dried parsley
1/2 cup shredded cheese (optional)
Instructions
Add chicken to the bottom of the slow cooker.
Sprinkle salt, pepper, paprika, thyme, and parsley over the chicken.
Add rice, onions, carrots, and garlic on top.
Pour chicken broth evenly over the ingredients.
Cover and cook on low for 4-5 hours or on high for 2-3 hours.
Add peas during the last 30 minutes of cooking.
Shred the chicken with a fork and stir everything together.
Optional: Sprinkle shredded cheese on top before serving.
Notes
Avoid using instant rice as it may overcook.
For added flavor, sear the chicken in a skillet before placing it in the slow cooker.
