  • 1 can (10.5 oz) condensed cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup diced onion
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • Salt and pepper, to taste
  • 1/4 cup melted butter
  • Optional garnish: chopped parsley or green onions

Instructions

  • In a large bowl, mix together the cream of chicken soup, sour cream, cheddar cheese, Parmesan cheese, onion, garlic powder, paprika, salt, and pepper.
  • Add the frozen hash brown potatoes to the slow cooker. Pour the cheese mixture over the potatoes and stir to combine.
  • Drizzle melted butter over the top.
  • Cover and cook on low for 4-5 hours or on high for 2-3 hours, stirring occasionally, until the potatoes are tender and the cheese is bubbly.
  • Garnish with parsley or green onions before serving, if desired.

Notes

  • Swap cream of chicken soup with cream of mushroom for a vegetarian option.
  • Add cooked bacon bits or diced ham for a heartier dish.
  • Use freshly shredded cheese for better melting and flavor.
