Ingredients

  • 2 boneless, skinless chicken breasts

  • 2 tablespoons unsalted butter

  • 3 cloves garlic, minced

  • 1 medium zucchini, sliced

  • 1 cup fresh or frozen sweet corn

  • 1 tablespoon olive oil

  • Salt and pepper, to taste

  • 1/2 teaspoon paprika (optional)

  • Fresh parsley, chopped (for garnish)

Instructions

  • Season chicken breasts with salt, pepper, and paprika.

  • Heat olive oil in a large skillet over medium heat.

  • Add chicken and cook for 6–7 minutes per side until golden and cooked through. Remove and set aside.

  • In the same skillet, melt butter and add minced garlic. Sauté for 1 minute until fragrant.

  • Add zucchini and corn; cook for 4–5 minutes until tender.

  • Return chicken to the pan, spoon butter sauce over the top, and cook for 2 more minutes.

 

  • Garnish with fresh parsley and serve hot.

Notes

  • Use chicken thighs for extra juiciness.

  • Add red pepper flakes for heat.
