This easy Rotel pasta recipe combines spicy Rotel tomatoes, ground beef, and creamy cheese with pasta for a quick and flavorful meal. It's a simple, family-friendly dish that's perfect for busy weeknights or casual dinners, packing bold flavors with minimal effort. Serve with a side of garlic bread for a complete meal.

  • 1 lb ground beef
  • 1 can (10 oz) Rotel tomatoes with green chilies
  • 8 oz pasta (penne, rotini, or shells)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  • Cook pasta according to package instructions; drain and set aside.
  • In a skillet, cook ground beef over medium heat until browned. Drain excess fat.
  • Stir in Rotel tomatoes, cream of mushroom soup, garlic powder, onion powder, salt, and pepper. Simmer for 5 minutes.
  • Stir in cooked pasta, sour cream, and shredded cheddar cheese until well combined and cheese is melted.
  • Serve hot, optionally garnished with chopped cilantro or green onions.

Notes

  • For extra heat, add diced jalapeños or use spicy Rotel tomatoes.
  • You can substitute ground beef with ground turkey or sausage for variety.
