Enjoy the ultimate Rachel Sandwich, a twist on the classic Reuben, featuring tender turkey, coleslaw, and Thousand Island dressing on crispy rye bread.

Ingredients

  • 4 slices of rye bread
  • 4 oz sliced turkey (deli-style or roasted)
  • 1 cup coleslaw (homemade or store-bought)
  • 4 slices Swiss cheese
  • 2 tbsp Thousand Island dressing (or Russian dressing)
  • 2 tbsp unsalted butter, softened

Instructions

  • Spread butter on one side of each slice of rye bread.
  • Heat a skillet over medium heat. Place two slices of bread, buttered side down, onto the skillet.
  • Layer each slice with 2 oz of turkey, 1 slice of Swiss cheese, and 1/2 cup of coleslaw. Drizzle with 1 tbsp of Thousand Island dressing.
  • Top each sandwich with the remaining slices of bread, buttered side up.
  • Cook for 3-4 minutes on each side, pressing gently, until the bread is golden and the cheese is melted.
  • Slice and serve warm.
