  • 1 lb shrimp, peeled and deveined
  • 4 cups chicken or seafood broth
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1-inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 cup diced tomatoes
  • 1 tbsp soy sauce
  • 1 tsp fish sauce (optional)
  • 1-2 tsp sriracha or red pepper flakes (adjust to taste)
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1 lime
  • 1/4 cup chopped cilantro
  • 2 green onions, sliced

Instructions

  • Heat olive oil in a pot over medium heat. Add onion, garlic, and ginger, and sauté until fragrant.
  • Add red bell pepper and diced tomatoes. Cook for 2-3 minutes.
  • Pour in broth, soy sauce, fish sauce, sriracha, salt, and black pepper. Bring to a simmer.
  • Add shrimp and cook for 3-4 minutes until pink and opaque.
  • Stir in lime juice, cilantro, and green onions. Remove from heat.
  • Serve hot and enjoy!
