  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, melted
  • 1/2 cup chopped pecans
  • 1 (8 oz) package cream cheese, softened
  • 1 cup powdered sugar
  • 1 (8 oz) container whipped topping, divided
  • 1 (15 oz) can pumpkin puree
  • 2 (3.4 oz) packages instant vanilla pudding mix
  • 1 tsp pumpkin pie spice
  • 2 cups cold milk

Instructions

  • Preheat oven to 350°F (175°C).
  • In a bowl, mix together flour, melted butter, and chopped pecans until combined. Press the mixture into a 9x13 inch baking dish.
  • Bake the crust for 15 minutes, then cool completely.
  • In a medium bowl, beat the softened cream cheese and powdered sugar until smooth. Fold in half of the whipped topping. Spread this mixture over the cooled crust.
  • In a large bowl, whisk together the pumpkin puree, vanilla pudding mix, pumpkin pie spice, and cold milk until thickened. Spread this over the cream cheese layer.
  • Top with the remaining whipped topping.
  • Chill in the refrigerator for at least 4 hours before serving.

Notes

  • Garnish with additional chopped pecans or a sprinkle of cinnamon for extra flavor.
  • For a lighter version, use reduced-fat cream cheese and whipped topping.
