Ingredients:
- 2 cups (210g) super-fine almond flour
- ½ cup (65g) coconut flour
- ¾ cup (150g) coconut sugar
- 1 tsp (5g) baking soda
- ½ tsp (3g) salt
- 1 tbsp (8g) ground cinnamon
- 3 large eggs
- ⅓ cup (80ml) melted coconut oil
- 1 tsp (5ml) vanilla extract
- 1 ½ cups (225g) finely grated zucchini
- ½ cup (60g) chopped walnuts
- 4 oz (115g) softened cream cheese
- 2 tbsp (30g) melted butter
- 1 cup (120g) powdered sugar
- 1 tsp (5ml) lemon juice
Instructions:
- Preheat oven to 350°F (175°C). Line a 9-inch round cake pan or Bundt pan with parchment paper or grease thoroughly with oil.
- Grate the zucchini using the fine side of a box grater. Place the shreds in a clean kitchen towel and squeeze firmly to remove excess moisture while keeping the zucchini moist.
- In a large bowl, whisk together almond flour, coconut flour, coconut sugar, baking soda, salt, and cinnamon until no clumps remain.
- Add eggs, melted coconut oil, and vanilla extract to the dry ingredients. Stir until the batter is smooth and velvety.
- Gently fold in the grated zucchini and chopped walnuts until just combined.
- Transfer the batter to the prepared pan, smoothing the top with a spatula.
- Bake for 40–45 minutes until the edges are deep mahogany-brown and a toothpick inserted into the center comes out clean.
- Let the cake cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
- Beat softened cream cheese and melted butter until smooth, then fold in powdered sugar and lemon juice until glossy.
- Spread the cream cheese glaze over the completely cooled cake.
