Ingredients:
- 1 lb ground turkey (93% lean)
- 1/2 cup panko breadcrumbs
- 1 large egg, beaten
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tsp salt
- 1/2 tsp ground black pepper
- 1 tbsp olive oil
- 1/4 cup honey
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp coarsely cracked black pepper
- 1 tsp fresh ginger, grated
- 1 tsp cornstarch
- 1 tbsp water
Instructions:
- In a large bowl, combine the ground turkey, panko, beaten egg, minced garlic, soy sauce, salt, and pepper. Mix gently with hands until combined; roll the mixture into 1-inch spheres (approximately 16–20 meatballs).
- Heat olive oil in a large non-stick skillet over medium-high heat. Add meatballs in a single layer and sear for 2–3 minutes per side until a deep brown crust forms. Remove meatballs from the pan and set aside.
- Turn heat to medium and stir in the honey, soy sauce, rice vinegar, cracked pepper, and ginger. Let the sauce bubble for 2 minutes until it begins to reduce.
- Whisk in the cornstarch and water slurry constantly until the sauce becomes velvety and thick. Return the meatballs to the pan, tossing gently until evenly coated in the glaze.
