Ingredients:
- 1 lb (450g) ground turkey (93% lean)
- 1/2 cup (60g) Panko breadcrumbs
- 2 oz (56g) crumbled feta cheese
- 1 cup (30g) fresh spinach, finely chopped
- 2 cloves (6g) garlic, minced
- 1 large egg, beaten
- 1 tsp (5g) dried oregano
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) black pepper
- 1 tbsp (15ml) olive oil
- 12 oz (340g) jarred roasted red peppers, drained
- 2 tbsp (30ml) olive oil
- 3 cloves (9g) garlic, smashed
- 1/4 cup (60g) plain Greek yogurt
- 1 tsp (5g) smoked paprika
- 1/2 tsp (3g) onion powder
- salt to taste
- pepper to taste
- fresh parsley for garnish
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper and lightly brush with 1 tbsp olive oil.
- In a large bowl, combine ground turkey, Panko, feta, chopped spinach, minced garlic, egg, oregano, salt, and pepper.
- Mix the ingredients gently using hands or a spatula until just combined to avoid a dense texture.
- Roll the mixture into 16 evenly sized balls, approximately 1.5 inches in diameter.
- Place meatballs on the baking sheet and bake for 15-18 minutes, or until mahogany-colored and the internal temperature reaches 165°F (74°C).
- While meatballs bake, heat 2 tbsp olive oil in a pan and sauté smashed garlic until aromatic.
- Combine roasted red peppers, sautéed garlic, Greek yogurt, smoked paprika, and onion powder in a high-speed blender or food processor; blend until velvety.
- Simmer the sauce in a pan, add the baked meatballs to coat, and garnish with fresh parsley.
