Ingredients:

  • 1 lb lean ground turkey
  • 1/2 cup Panko breadcrumbs
  • 1/3 cup finely grated Parmesan cheese
  • 1 large egg, beaten
  • 2 tbsp fresh parsley, minced
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1 1/2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup shaved Parmesan cheese
  • Fresh basil leaves for garnish

Instructions:

  1. Combine the ground turkey, Panko, grated Parmesan, beaten egg, minced parsley, garlic, salt, pepper, and garlic powder in a large bowl. Gently incorporate ingredients using your hands or a fork until just combined. Note: Stop as soon as it's mixed to avoid a rubbery texture.
  2. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Scoop about 2 tablespoons of the mixture and roll into 1.5 inch balls. Place them on the baking sheet with space between each meatball.
  4. Bake for 12–15 minutes until the edges are golden and the centers are cooked through.
  5. Spoon 1 tablespoon of marinara sauce onto each hot Turkey Meatball Parmesan.
  6. Top each one with a pinch of shredded mozzarella and a shaving of Parmesan.
  7. Return to the oven or place under the broiler for 2–3 minutes until the cheese is bubbling and slightly browned.
  8. Remove from the oven and garnish with fresh basil leaves before serving.
