Ingredients:
- 1 lb lean ground turkey
- 1/2 cup Panko breadcrumbs
- 1/3 cup finely grated Parmesan cheese
- 1 large egg, beaten
- 2 tbsp fresh parsley, minced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1 1/2 cups marinara sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup shaved Parmesan cheese
- Fresh basil leaves for garnish
Instructions:
- Combine the ground turkey, Panko, grated Parmesan, beaten egg, minced parsley, garlic, salt, pepper, and garlic powder in a large bowl. Gently incorporate ingredients using your hands or a fork until just combined. Note: Stop as soon as it's mixed to avoid a rubbery texture.
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Scoop about 2 tablespoons of the mixture and roll into 1.5 inch balls. Place them on the baking sheet with space between each meatball.
- Bake for 12–15 minutes until the edges are golden and the centers are cooked through.
- Spoon 1 tablespoon of marinara sauce onto each hot Turkey Meatball Parmesan.
- Top each one with a pinch of shredded mozzarella and a shaving of Parmesan.
- Return to the oven or place under the broiler for 2–3 minutes until the cheese is bubbling and slightly browned.
- Remove from the oven and garnish with fresh basil leaves before serving.
