Ingredients:

  • 1 lb lean ground turkey
  • 1/2 cup unseasoned breadcrumbs
  • 1 large egg, lightly beaten
  • 3 tbsp roasted red pepper liquid
  • 1/4 cup finely minced roasted red peppers
  • 3 cloves garlic, minced
  • 1 tsp red pepper flakes
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp honey
  • 2 tbsp Sriracha
  • 1 tbsp soy sauce
  • 1 tsp apple cider vinegar

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the beaten egg, roasted red pepper liquid, minced peppers, garlic, red pepper flakes, smoked paprika, salt, and black pepper.
  3. Add the ground turkey and breadcrumbs to the bowl. Gently fold the ingredients together with your hands or a fork until just combined, avoiding overmixing to maintain a tender texture.
  4. Scoop approximately 1.5 tbsp of the mixture and roll into 1-inch balls.
  5. Place meatballs on the prepared baking sheet, leaving at least one inch of space between each.
  6. Bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the edges are golden brown.
  7. While meatballs are baking, combine honey, Sriracha, soy sauce, and apple cider vinegar in a small saucepan over medium heat.
  8. Simmer the sauce for 3-5 minutes until it thickens into a velvety glaze.
  9. Toss the hot meatballs in the glaze or drizzle the sauce over the top immediately after removing them from the oven.
