Ingredients:
- 1 lb lean ground turkey
- 1/2 cup unseasoned breadcrumbs
- 1 large egg, lightly beaten
- 3 tbsp roasted red pepper liquid
- 1/4 cup finely minced roasted red peppers
- 3 cloves garlic, minced
- 1 tsp red pepper flakes
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp honey
- 2 tbsp Sriracha
- 1 tbsp soy sauce
- 1 tsp apple cider vinegar
Instructions:
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a large bowl, whisk together the beaten egg, roasted red pepper liquid, minced peppers, garlic, red pepper flakes, smoked paprika, salt, and black pepper.
- Add the ground turkey and breadcrumbs to the bowl. Gently fold the ingredients together with your hands or a fork until just combined, avoiding overmixing to maintain a tender texture.
- Scoop approximately 1.5 tbsp of the mixture and roll into 1-inch balls.
- Place meatballs on the prepared baking sheet, leaving at least one inch of space between each.
- Bake for 15-20 minutes, or until the internal temperature reaches 165°F (74°C) and the edges are golden brown.
- While meatballs are baking, combine honey, Sriracha, soy sauce, and apple cider vinegar in a small saucepan over medium heat.
- Simmer the sauce for 3-5 minutes until it thickens into a velvety glaze.
- Toss the hot meatballs in the glaze or drizzle the sauce over the top immediately after removing them from the oven.
