Ingredients:

  • 1/2 cup extra virgin olive oil
  • 3 tbsp red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 lb cooked chicken breast, cubed
  • 1 cup diced cucumber
  • 1 cup halved cherry tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup sliced pepperoncini
  • 1/2 cup sliced provolone cheese pearls
  • 1/4 cup sliced black olives
  • 6 cups chopped romaine lettuce

Instructions:

  1. Whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper in a small bowl. Pour equal amounts into the bottom of each of the four mason jars.
  2. Layer in the diced cucumbers, cherry tomatoes, and red onions on top of the dressing.
  3. Place the cubed chicken breast directly on top of the vegetables, followed by the sliced pepperoncini, olives, and cheese pearls.
  4. Pack the chopped romaine lettuce into the remaining space, pressing down gently to fit. Screw the lid on tightly.
