Ingredients:
- 1/2 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 lb cooked chicken breast, cubed
- 1 cup diced cucumber
- 1 cup halved cherry tomatoes
- 1/2 cup diced red onion
- 1/2 cup sliced pepperoncini
- 1/2 cup sliced provolone cheese pearls
- 1/4 cup sliced black olives
- 6 cups chopped romaine lettuce
Instructions:
- Whisk together the olive oil, red wine vinegar, oregano, garlic powder, salt, and pepper in a small bowl. Pour equal amounts into the bottom of each of the four mason jars.
- Layer in the diced cucumbers, cherry tomatoes, and red onions on top of the dressing.
- Place the cubed chicken breast directly on top of the vegetables, followed by the sliced pepperoncini, olives, and cheese pearls.
- Pack the chopped romaine lettuce into the remaining space, pressing down gently to fit. Screw the lid on tightly.
