Ingredients:
- 1.5 lb salmon fillet
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp fresh parsley, finely chopped
- 1/2 tsp paprika
Instructions:
- Preheat the oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper. Note: Preheating ensures the fish starts searing immediately.
- Use paper towels to firmly pat the salmon fillets completely dry on all sides. Until the surface feels tacky, not wet.
- Season the fillets generously with kosher salt and black pepper. Note: Seasoning the skin helps it roast better.
- In a small mixing bowl, whisk together the melted unsalted butter, minced garlic, lemon juice, paprika, and chopped parsley.
- Arrange the fillets on the prepared baking sheet.
- Brush the garlic butter mixture evenly over the top of each fillet. Note: Make sure the edges are covered to prevent drying.
- Bake on the center rack for 12-15 minutes until the fish is opaque on the outside and reaches 130°F-135°F internally.
- Remove from the oven and transfer to a plate.
- Let the salmon rest for 5 minutes to allow juices to redistribute. Note: This prevents the juices from running out when you cut into it.
