Ingredients:
- 1 lb ground turkey (blend of breast and thigh)
- 1/2 cup almond flour
- 1/4 cup freshly grated parmesan cheese
- 2 tbsp fresh parsley, finely chopped
- 3 cloves garlic, minced
- 1 tbsp lemon zest
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup low-sodium chicken broth
- 3 tbsp fresh lemon juice
- 1 tbsp honey
- 2 cloves garlic, minced
- 1 tbsp unsalted butter
- 1/4 tsp red pepper flakes
Instructions:
- Combine all meatball ingredients (ground turkey, almond flour, parmesan, parsley, garlic, lemon zest, salt, and pepper) in a large bowl. Fold together gently until just distributed to avoid tough meatballs.
- Form the mixture into 8 equal spheres (approx. 2 inches wide) and place them on a parchment-lined baking sheet.
- Bake at 400°F (200°C) for 20-25 minutes, or until a meat thermometer reads an internal temperature of 165°F (74°C).
- While meatballs rest, combine chicken broth, lemon juice, honey, minced garlic, butter, and red pepper flakes in a skillet over medium heat.
- Simmer the glaze for 3-5 minutes until thickened and glossy. Toss the baked meatballs in the glaze until fully coated.
