Ingredients:

  • 1 lb ground turkey (blend of breast and thigh)
  • 1/2 cup almond flour
  • 1/4 cup freshly grated parmesan cheese
  • 2 tbsp fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp lemon zest
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup low-sodium chicken broth
  • 3 tbsp fresh lemon juice
  • 1 tbsp honey
  • 2 cloves garlic, minced
  • 1 tbsp unsalted butter
  • 1/4 tsp red pepper flakes

Instructions:

  1. Combine all meatball ingredients (ground turkey, almond flour, parmesan, parsley, garlic, lemon zest, salt, and pepper) in a large bowl. Fold together gently until just distributed to avoid tough meatballs.
  2. Form the mixture into 8 equal spheres (approx. 2 inches wide) and place them on a parchment-lined baking sheet.
  3. Bake at 400°F (200°C) for 20-25 minutes, or until a meat thermometer reads an internal temperature of 165°F (74°C).
  4. While meatballs rest, combine chicken broth, lemon juice, honey, minced garlic, butter, and red pepper flakes in a skillet over medium heat.
  5. Simmer the glaze for 3-5 minutes until thickened and glossy. Toss the baked meatballs in the glaze until fully coated.
