Ingredients:

  • 1 lb ground turkey (93% lean)
  • 1/2 cup Italian seasoned breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 tbsp fresh parsley, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup yellow onion, grated
  • 1 tsp dried oregano
  • 1 tsp kosher salt
  • 1/2 tsp black pepper

Instructions:

  1. In a large bowl, whisk together the beaten egg, Parmesan, breadcrumbs, garlic, grated onion, and seasonings.
  2. Stir in the ground turkey using your hands or a fork. Mix just until combined; stop the moment you no longer see streaks of egg to avoid overworking the meat.
  3. Line a rimmed baking sheet with parchment paper or a silicone mat.
  4. Scoop about 1.5 tablespoons of the mixture and gently roll it between your palms into 1.5-inch spheres. Avoid squeezing the meat tightly.
  5. Place meatballs on the sheet with 1 inch of space between them. Bake at 400°F (200°C) for 15–20 minutes until the internal temperature reaches 165°F (74°C).
  6. Let the meatballs rest for 5 minutes before serving to allow juices to redistribute.
