Ingredients:
- 1 lb ground turkey (93% lean)
- 1/2 cup Italian seasoned breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 tbsp fresh parsley, finely chopped
- 3 cloves garlic, minced
- 1/4 cup yellow onion, grated
- 1 tsp dried oregano
- 1 tsp kosher salt
- 1/2 tsp black pepper
Instructions:
- In a large bowl, whisk together the beaten egg, Parmesan, breadcrumbs, garlic, grated onion, and seasonings.
- Stir in the ground turkey using your hands or a fork. Mix just until combined; stop the moment you no longer see streaks of egg to avoid overworking the meat.
- Line a rimmed baking sheet with parchment paper or a silicone mat.
- Scoop about 1.5 tablespoons of the mixture and gently roll it between your palms into 1.5-inch spheres. Avoid squeezing the meat tightly.
- Place meatballs on the sheet with 1 inch of space between them. Bake at 400°F (200°C) for 15–20 minutes until the internal temperature reaches 165°F (74°C).
- Let the meatballs rest for 5 minutes before serving to allow juices to redistribute.
