Ingredients:
- 1.5 lbs salmon fillets
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 2 tbsp extra virgin olive oil
- 2 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp dried oregano
Instructions:
- Use paper towels to pat the salmon fillets completely dry to ensure a mahogany-colored exterior.
- Line a large rimmed baking sheet with parchment paper to prevent the salmon skin from sticking.
- In a small bowl, whisk together the olive oil, melted butter, minced garlic, lemon juice, and dried oregano.
- Rub salt and pepper into the flesh of the fillets, then brush the garlic-lemon mixture evenly over the top of each fillet.
- Bake at 400°F (200°C) for 12 to 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium.
- Remove from the oven and let the fish rest for 5 minutes to allow juices to redistribute.
