Ingredients:

  • 1.5 lbs salmon fillets
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 2 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp dried oregano

Instructions:

  1. Use paper towels to pat the salmon fillets completely dry to ensure a mahogany-colored exterior.
  2. Line a large rimmed baking sheet with parchment paper to prevent the salmon skin from sticking.
  3. In a small bowl, whisk together the olive oil, melted butter, minced garlic, lemon juice, and dried oregano.
  4. Rub salt and pepper into the flesh of the fillets, then brush the garlic-lemon mixture evenly over the top of each fillet.
  5. Bake at 400°F (200°C) for 12 to 15 minutes, or until the internal temperature reaches 135°F (57°C) for medium.
  6. Remove from the oven and let the fish rest for 5 minutes to allow juices to redistribute.
