Ingredients:

  • 4 (6 oz) salmon fillets, center-cut and skin-on
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 3 cloves garlic, minced fine
  • 1 tsp lemon zest, finely grated
  • 1/2 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 lemon, sliced into thin rounds

Instructions:

  1. Preheat your oven to 375°F (190°C). Line your baking sheet with parchment paper or aluminum foil and create four small 'boats' or nests in the foil to keep the fillets separated.
  2. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, lemon zest, and dried oregano. Pat the salmon fillets bone-dry with a paper towel and brush the garlic paste generously over the top and sides of each fillet.
  3. Season each fillet with salt and black pepper. Place one lemon slice on top of each piece of fish and bake for 12–15 minutes until the salmon is opaque on the outside but still slightly translucent in the very center.
  4. Remove the pan from the oven. Immediately tent the salmon loosely with foil and let it rest for 5 minutes to allow the juices to redistribute.
