Ingredients:
- 1 medium yellow onion, roughly chopped (150g)
- 4 cloves garlic, peeled (20g)
- 1/4 cup fresh Italian parsley, roughly chopped (15g)
- 1 tbsp olive oil (15ml)
- 1 lb ground turkey 93% lean (450g)
- 1 large egg, lightly beaten (50g)
- 1/2 cup Italian breadcrumbs (60g)
- 1/4 cup whole milk (60ml)
- 1 tsp kosher salt (5g)
- 1/2 tsp black pepper (2g)
- 1 tsp dried oregano (2g)
- 1/2 tsp onion powder (1g)
- 1/4 tsp red pepper flakes (1g)
Instructions:
- Place the chopped onion, garlic, parsley, and olive oil into the food processor. Pulse 8–10 times until the mixture is finely minced but not a puree.
- Add the milk and breadcrumbs to the processor, pulsing 3–4 more times until a thick paste forms.
- Add the ground turkey, beaten egg, and all seasonings to the processor bowl. Pulse in short, 1-second bursts only until the ingredients are just combined to avoid over-processing.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Scoop about 2 tbsp of the mixture and roll into 1.5-inch spheres. Arrange on the baking sheet with 1 inch of space between each.
- Bake for 15 minutes or until cooked through and golden brown.
