Ingredients:
- 2 cups (250g) all-purpose flour
- 1 tsp (5g) baking soda
- 1 tsp (5g) baking powder
- 1/2 tsp (3g) salt
- 1 tbsp (6g) ground cinnamon
- 1/2 tsp (1g) ground nutmeg
- 1/4 tsp (1g) ground cardamom
- 1/2 cup (115g) unsalted butter, softened
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 tsp (5ml) vanilla extract
- 1/2 cup (120g) sour cream
- 2 cups (230g) grated zucchini, squeezed lightly
- 1/2 cup (60g) chopped walnuts
- 8 oz (225g) cream cheese, softened
- 1/2 cup (115g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 1 tsp (5ml) vanilla extract
- 1 pinch (0.5g) salt
Instructions:
- Grate the zucchini using the fine holes of a box grater. Place the shreds in a clean kitchen towel and squeeze gently to remove excess liquid.
- In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cardamom.
- In a large bowl, beat the softened butter and granulated sugar until pale and fluffy, approximately 3 minutes.
- Add eggs one at a time, followed by the vanilla extract and sour cream. Mix until smooth.
- Gently fold in the dry ingredients until just combined. Stir in the squeezed zucchini and chopped walnuts by hand using a spatula.
- Pour batter into a greased and parchment-lined 9x13 inch pan.
- Bake at 350°F (175°C) for 35–40 minutes.
- Prepare frosting by beating together softened cream cheese and butter until smooth. Mix in powdered sugar, vanilla, and salt until fluffy.
- Allow cake to cool completely before applying the cream cheese frosting with an offset spatula.
