Ingredients:
- 1.5 cups all-purpose flour
- 0.5 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking soda
- 0.5 tsp baking powder
- 0.5 tsp salt
- 0.25 tsp ground cinnamon
- 0.5 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 2 cups grated zucchini
- 0.5 cup semi-sweet chocolate chips
Instructions:
- In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, salt, and cinnamon until no large lumps remain.
- Create a well in the center of the dry ingredients and add the vegetable oil, eggs, and vanilla extract. Stir with a spatula until just combined.
- Gently fold in the grated zucchini and chocolate chips until no streaks of flour remain.
- Grease an 8x8 inch baking pan or line it with parchment paper, then pour in the batter and spread it evenly.
- Bake in a preheated oven at 350°F (175°C) for 30–35 minutes.
- Remove from oven when the edges slightly pull away from the pan and a toothpick inserted in the center comes out clean.
