Ingredients:

  • 1.5 cups all-purpose flour
  • 0.5 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 0.25 tsp ground cinnamon
  • 0.5 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups grated zucchini
  • 0.5 cup semi-sweet chocolate chips

Instructions:

  1. In a large bowl, whisk together the flour, cocoa powder, sugar, baking soda, baking powder, salt, and cinnamon until no large lumps remain.
  2. Create a well in the center of the dry ingredients and add the vegetable oil, eggs, and vanilla extract. Stir with a spatula until just combined.
  3. Gently fold in the grated zucchini and chocolate chips until no streaks of flour remain.
  4. Grease an 8x8 inch baking pan or line it with parchment paper, then pour in the batter and spread it evenly.
  5. Bake in a preheated oven at 350°F (175°C) for 30–35 minutes.
  6. Remove from oven when the edges slightly pull away from the pan and a toothpick inserted in the center comes out clean.
