Ingredients:
- 1.5 cups all-purpose flour
- 0.5 cup unsweetened cocoa powder
- 1 tsp baking soda
- 0.5 tsp salt
- 1 tsp instant espresso powder
- 0.5 cup vegetable oil
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1.5 cups grated zucchini
- 0.75 cup semi-sweet chocolate chips
- 0.5 cup chopped walnuts
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan with oil or line it with parchment paper.
- In a large bowl, whisk together the all-purpose flour, cocoa powder, baking soda, salt, and instant espresso powder.
- In a separate bowl, beat the eggs, granulated sugar, vegetable oil, and vanilla extract until the mixture is smooth and slightly pale.
- Stir the dry ingredients into the wet mixture using a spatula. Mix just until the streaks of flour disappear; do not overmix.
- Gently fold in the grated zucchini, semi-sweet chocolate chips, and chopped walnuts.
- Pour the batter into the prepared loaf pan and bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
