Ingredients:

  • 4 salmon fillets, 6 oz (170g) each
  • 1 tbsp olive oil
  • 3 tbsp brown sugar, packed
  • 1 tbsp coarsely cracked black pepper
  • 1 tsp kosher salt
  • 1/2 tsp garlic powder
  • 2 tbsp unsalted butter, melted
  • 1 lemon, sliced into rounds
  • Fresh parsley for garnish

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Pat the salmon fillets completely dry with paper towels to ensure the rub adheres and caramelizes.
  3. In a small bowl, stir together brown sugar, cracked black pepper, kosher salt, and garlic powder.
  4. Brush the tops of the fillets lightly with olive oil, then press the pepper rub firmly into the flesh side to create a thick, even layer.
  5. Place lemon slices directly on top of the rub and bake for 12–15 minutes until the sugar bubbles and edges are opaque pink.
  6. Drizzle melted butter over the fillets during the last 2 minutes of cooking.
  7. Remove from oven when internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for well-done. Garnish with fresh parsley.
