Ingredients:
- 4 salmon fillets, 6 oz (170g) each
- 1 tbsp olive oil
- 3 tbsp brown sugar, packed
- 1 tbsp coarsely cracked black pepper
- 1 tsp kosher salt
- 1/2 tsp garlic powder
- 2 tbsp unsalted butter, melted
- 1 lemon, sliced into rounds
- Fresh parsley for garnish
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Pat the salmon fillets completely dry with paper towels to ensure the rub adheres and caramelizes.
- In a small bowl, stir together brown sugar, cracked black pepper, kosher salt, and garlic powder.
- Brush the tops of the fillets lightly with olive oil, then press the pepper rub firmly into the flesh side to create a thick, even layer.
- Place lemon slices directly on top of the rub and bake for 12–15 minutes until the sugar bubbles and edges are opaque pink.
- Drizzle melted butter over the fillets during the last 2 minutes of cooking.
- Remove from oven when internal temperature reaches 135°F (57°C) for medium-rare or 145°F (63°C) for well-done. Garnish with fresh parsley.
