Ingredients:

  • 4 salmon fillets, 6 oz each
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp unsalted butter, melted
  • 1 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Pat the salmon fillets bone-dry with a paper towel to ensure the glaze adheres and the fish does not steam.
  3. In a small bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, and lemon zest until emulsified.
  4. Brush half of the garlic-butter mixture over the top and sides of the salmon fillets.
  5. Place fillets skin-side down on the parchment-lined sheet and bake for 12–15 minutes, or until the sides turn opaque and the flesh flakes easily with a fork.
  6. Remove from oven, drizzle the remaining glaze over the top, and garnish with chopped fresh parsley.
