Ingredients:
- 4 salmon fillets, 6 oz each
- 1/2 tsp salt
- 1/4 tsp black pepper
- 3 tbsp unsalted butter, melted
- 1 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Pat the salmon fillets bone-dry with a paper towel to ensure the glaze adheres and the fish does not steam.
- In a small bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, and lemon zest until emulsified.
- Brush half of the garlic-butter mixture over the top and sides of the salmon fillets.
- Place fillets skin-side down on the parchment-lined sheet and bake for 12–15 minutes, or until the sides turn opaque and the flesh flakes easily with a fork.
- Remove from oven, drizzle the remaining glaze over the top, and garnish with chopped fresh parsley.
