Ingredients:
- 2 cups (180g) rolled oats
- 1/2 cup (60g) almond flour
- 1 tsp (5g) baking powder
- 1 tsp (2g) ground cinnamon
- 1/4 tsp (1.5g) salt
- 1/2 cup (120g) plain Greek yogurt
- 1/3 cup (80ml) maple syrup
- 2 large (100g) eggs
- 1 tsp (5ml) vanilla extract
- 1 1/2 cups (225g) Granny Smith apples, peeled and finely diced
- 1/4 cup (30g) rolled oats
- 2 tbsp (25g) coconut oil
- 2 tbsp (25g) brown sugar
- 1/2 tsp (1g) ground cinnamon
Instructions:
- Preheat the oven to 350°F (180°C) and line an 8x8 inch baking pan with parchment paper.
- Pulse the 2 cups of rolled oats in a blender until they reach a fine, flour-like consistency.
- In a large bowl, whisk together the blended oat flour, 1/2 cup almond flour, 1 tsp baking powder, 1 tsp cinnamon, and 1/4 tsp salt until evenly distributed.
- In a separate bowl, whisk the 2 eggs, 1/2 cup Greek yogurt, 1/3 cup maple syrup, and 1 tsp vanilla extract until the mixture is smooth and pale.
- Pour the wet ingredients into the dry ingredients, folding gently with a spatula until just combined.
- Stir in the 1 1/2 cups of finely diced apples, ensuring the fruit is evenly suspended in the batter.
- Pour the batter into the prepared baking pan and smooth the top.
- In a small bowl, mix 1/4 cup rolled oats, 2 tbsp coconut oil, 2 tbsp brown sugar, and 1/2 tsp cinnamon with a fork until crumbly, then sprinkle evenly over the surface of the batter.
- Bake for 30 minutes or until the top is chestnut brown and a toothpick inserted into the center comes out clean.
