  • 1 lb kielbasa, sliced
  • 4 large potatoes, peeled and diced
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 1 cup heavy cream or milk
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add sliced kielbasa and cook until browned, about 5 minutes. Remove and set aside.
  • In the same pot, sauté onions and garlic until softened.
  • Add diced potatoes and carrots, cook for 5 minutes.
  • Pour in the broth and bring to a boil.
  • Reduce heat and simmer for 20 minutes, until the potatoes are tender.
  • Stir in cream, smoked paprika, salt, and pepper.
  • Add the cooked kielbasa back into the pot and simmer for another 5 minutes.
  • Serve hot, garnished with fresh parsley if desired.

Notes

  • You can substitute kielbasa with smoked sausage or turkey sausage for a lighter option.
  • For a thicker soup, mash some of the potatoes after cooking.
  • Add chopped celery or bell peppers for extra vegetables.
