This recipe is perfect for summer celebrations, bringing together the sweetness of fresh or canned peaches with a rich and buttery glaze. The cake's tender crumb and smooth icing make it a delightful dessert, whether for a special occasion or a simple family treat.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1½ cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1 cup sour cream
  • 2 cups diced peaches (fresh or canned, drained)

Brown Butter Icing:

  • ½ cup unsalted butter
  • 1½ cups powdered sugar
  • 2-3 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a Bundt pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream butter and sugar together until light and fluffy.
  4. Add eggs one at a time, beating well after each addition. Mix in vanilla extract.
  5. Gradually add the flour mixture, alternating with sour cream, and mix until just combined.
  6. Gently fold in the diced peaches.
  7. Pour the batter into the prepared Bundt pan and smooth the top.
  8. Bake for 55-60 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

For the Brown Butter Icing:

  1. In a saucepan, melt butter over medium heat, stirring until it turns golden brown with a nutty aroma. Remove from heat and let cool slightly.
  2. Whisk in powdered sugar, milk, and vanilla extract until smooth.
  3. Drizzle the icing over the cooled cake and serve.

Notes

  • Use fresh, ripe peaches for the best flavor, but canned peaches work well in a pinch.
  • Ensure the brown butter cools slightly before adding to the icing, or it may become too thin.
