  • 2 tablespoons olive oil
  • 1 lb chicken breast, cubed
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 cup orzo pasta
  • 2 ½ cups chicken broth
  • 1 cup heavy cream
  • 1 cup baby spinach
  • 1 cup cherry tomatoes, halved
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Lemon wedges (for garnish)

Instructions

  • Heat olive oil in a large skillet or pot over medium heat. Add cubed chicken and season with salt, pepper, paprika, and oregano. Cook until chicken is browned and cooked through. Remove and set aside.
  • In the same pot, add onion and garlic. Sauté until softened, about 2 minutes.
  • Stir in the orzo pasta and toast for 1 minute.
  • Pour in the chicken broth and heavy cream. Bring to a simmer and cook for 8-10 minutes, stirring occasionally, until the orzo is tender and the liquid is slightly thickened.
  • Add baby spinach, cherry tomatoes, and cooked chicken to the pot. Stir to combine and cook for 2-3 minutes until spinach wilts and everything is heated through.
  • Remove from heat and stir in Parmesan cheese. Adjust seasoning with salt and pepper as needed.
  • Serve warm, garnished with lemon wedges if desired.

Notes

  • Use rotisserie chicken for an even quicker meal.
  • Substitute kale or arugula for spinach, if preferred.
  • Add red pepper flakes for a touch of heat.
