2 tbsp olive oil
2 boneless, skinless chicken breasts, cubed
1 tbsp Cajun seasoning
1 red bell pepper, sliced
1 yellow bell pepper, sliced
3 cloves garlic, minced
3 cups chicken broth
1 1/2 cups heavy cream
12 oz penne pasta
1 cup grated Parmesan cheese
Salt and pepper to taste
Chopped parsley (for garnish)
Instructions
Heat olive oil in a large pot over medium heat. Season cubed chicken with Cajun seasoning and cook until golden brown. Remove and set aside.
In the same pot, sauté bell peppers until softened. Add garlic and cook for 1 minute.
Pour in chicken broth and heavy cream. Bring to a boil, then add penne pasta. Cook, stirring occasionally, until pasta is tender (about 12-15 minutes).
Stir in Parmesan cheese, cooked chicken, and adjust seasoning with salt and pepper.
Garnish with chopped parsley and serve hot.
