This One Pot Cajun Chicken Pasta recipe combines bold Cajun flavors, creamy sauce, and tender chicken for a delicious one-dish meal.

  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts, cubed
  • 1 tbsp Cajun seasoning
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cloves garlic, minced
  • 3 cups chicken broth
  • 1 1/2 cups heavy cream
  • 12 oz penne pasta
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Chopped parsley (for garnish)

Instructions

  • Heat olive oil in a large pot over medium heat. Season cubed chicken with Cajun seasoning and cook until golden brown. Remove and set aside.
  • In the same pot, sauté bell peppers until softened. Add garlic and cook for 1 minute.
  • Pour in chicken broth and heavy cream. Bring to a boil, then add penne pasta. Cook, stirring occasionally, until pasta is tender (about 12-15 minutes).
  • Stir in Parmesan cheese, cooked chicken, and adjust seasoning with salt and pepper.
  • Garnish with chopped parsley and serve hot.
