  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 cup heavy cream
  • 1/4 cup chicken broth
  • 1/4 cup diced tomatoes (optional)
  • 2 tbsp chopped cilantro (for garnish)

Instructions

  1. Season chicken breasts with chili powder, paprika, cumin, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet over medium heat and sear the chicken until golden brown on both sides (about 4-5 minutes per side). Remove and set aside.
  3. In the same skillet, pour in chicken broth and heavy cream. Stir to combine, scraping any bits off the pan.
  4. Add shredded cheddar and Monterey Jack cheese to the skillet, stirring until the cheese is melted and smooth.
  5. Return the chicken breasts to the skillet, spooning the cheese sauce over them.
  6. Simmer for 5-7 minutes or until the chicken is cooked through.
  7. Garnish with diced tomatoes and fresh cilantro before serving.
