  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup canned pumpkin puree
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground ginger
  • 1/4 tsp ground cloves

For the Glaze:

  • 1 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract

Instructions

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, cream together the butter and sugar until light and fluffy.
  • Add the pumpkin puree, egg, and vanilla extract, and beat until well combined.
  • In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Drop tablespoon-sized dough onto the prepared baking sheet.
  • Bake for 10-12 minutes or until the edges are set but the centers are still soft. Cool on a wire rack.
  • For the glaze, whisk together powdered sugar, milk, and vanilla extract. Drizzle over cooled cookies.
