  • 2 cups cooked chicken (breaded or grilled), shredded or sliced
  • 4 slices of bread (Italian, sourdough, or your choice)
  • 1/2 cup marinara sauce
  • 1 cup shredded mozzarella cheese (or 4 slices)
  • 1/4 cup grated Parmesan cheese
  • 2 tbsp butter
  • 1/2 tsp garlic powder
  • Fresh basil or parsley for garnish (optional)

Instructions

  • In a small saucepan, warm marinara sauce over medium heat. Add the cooked chicken and stir to coat evenly. Heat through for 2-3 minutes.
  • Butter one side of each bread slice and sprinkle lightly with garlic powder.
  • Heat a skillet over medium heat. Place two slices of bread, buttered side down, in the skillet.
  • Top each slice with a layer of shredded mozzarella, Parmesan cheese, and the marinara-coated chicken.
  • Place the remaining bread slices on top, buttered side up. Grill for 3-4 minutes per side, pressing lightly with a spatula, until the bread is golden brown and the cheese is melted.
  • Remove from the skillet and serve hot, garnished with fresh basil or parsley if desired.

Notes

  • You can use store-bought breaded chicken tenders or rotisserie chicken for convenience.
  • For an extra crispy texture, toast the bread lightly before assembling the sandwich.
