  • 1 lb ground beef (or Italian sausage)
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 can (15 oz) tomato sauce
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups beef broth (or chicken broth)
  • 2 cups water
  • 8 lasagna noodles, broken into pieces
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh basil, chopped (optional for garnish)
  • Salt and pepper to taste

Instructions

  • Heat olive oil in a large pot over medium heat. Add the ground beef or Italian sausage and cook until browned, breaking it up as it cooks, about 5-7 minutes. Drain excess fat if necessary.
  • Add the diced onion and cook until softened, about 5 minutes. Stir in the garlic, oregano, basil, and red pepper flakes (if using) and cook for an additional 1-2 minutes.
  • Stir in the tomato sauce, diced tomatoes (with their juice), beef broth, and water. Bring the mixture to a boil, then reduce the heat and let it simmer for 10 minutes.
  • Add the broken lasagna noodles to the pot and cook until the noodles are tender, about 10 minutes. Stir occasionally to prevent the noodles from sticking.
  • In a small bowl, mix together the ricotta, mozzarella, and Parmesan cheeses.
  • Taste the soup and season with salt and pepper as needed. Ladle the soup into bowls and top each serving with a dollop of the cheese mixture.
  • Garnish with fresh basil if desired. Serve hot.

  • For a richer flavor, use a combination of ground beef and Italian sausage.
  • This soup can be made ahead and reheated, though the noodles may absorb more liquid over time. Add extra broth if needed when reheating.
