1 large sub roll or baguette
4 slices of salami
4 slices of capicola or ham
4 slices of pepperoni
2 slices of provolone cheese
½ cup shredded lettuce
¼ cup diced tomatoes
2 tbsp red onion, finely sliced
2 tbsp banana peppers, sliced
2 tbsp mayonnaise
1 tbsp red wine vinegar
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
Slice the sub roll lengthwise and remove some of the inner bread for space. Toast lightly if desired.
In a small bowl, whisk together mayonnaise, red wine vinegar, olive oil, Italian seasoning, salt, and pepper. Toss with shredded lettuce, diced tomatoes, red onion, and banana peppers to create the grinder salad.
Layer salami, capicola, pepperoni, and provolone cheese on the bottom half of the sub roll.
Top with the grinder salad mixture, spreading it evenly over the meats and cheese.
Place the top half of the sub roll over the fillings. Press lightly, slice in half, and serve immediately.
Notes
Add a drizzle of balsamic glaze for extra flavor.
Use whole-grain or gluten-free rolls to accommodate dietary preferences.
Substitute meats with turkey or roast beef if desired.
