  • 4 chicken breasts (bone-in or boneless)
  • 1.5 lbs baby potatoes, halved
  • 1 medium onion, sliced
  • 4 garlic cloves, minced
  • 1 cup chicken broth
  • 1/4 cup olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 1/4 cup grated Parmesan cheese (optional)
  • Fresh parsley for garnish

Instructions

  • Place the chicken breasts in the bottom of the crockpot.
  • Add the halved baby potatoes, sliced onion, and minced garlic over the chicken.
  • In a small bowl, mix chicken broth, olive oil, Italian seasoning, paprika, salt, and black pepper. Pour this mixture evenly over the ingredients in the crockpot.
  • Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours until the chicken is tender and the potatoes are cooked through.
  • Sprinkle Parmesan cheese on top if desired, and let it melt for a few minutes before serving.
  • Garnish with fresh parsley and serve hot.

Notes

  • Use bone-in chicken for extra flavor, but boneless works well too.
  • You can substitute baby potatoes with Yukon gold or red potatoes, cut into chunks.
