1 large Italian roll or ciabatta bread
½ cup shredded lettuce
¼ cup cherry tomatoes, diced
¼ cup red onion, finely chopped
¼ cup banana peppers, sliced
4 slices of salami
4 slices of pepperoni
4 slices of ham or capicola
2 slices of provolone cheese
2 tbsp mayonnaise
1 tbsp red wine vinegar
1 tbsp olive oil
1 tsp Italian seasoning
Salt and pepper to taste
Instructions
Slice the Italian roll lengthwise and remove some of the inner bread to make space for the filling. Toast lightly if desired.
In a large bowl, mix lettuce, tomatoes, red onion, banana peppers, mayonnaise, red wine vinegar, olive oil, Italian seasoning, salt, and pepper to create the chopped salad mixture.
Layer salami, pepperoni, ham, and provolone cheese evenly on the bottom half of the bread.
Spoon the chopped salad mixture over the meats and cheese.
Top with the other half of the bread, press lightly, and slice into portions. Serve immediately.
Notes
Add a drizzle of balsamic glaze for extra tang.
Use whole-grain or gluten-free bread if preferred.
