Try this Italian chopped salad sandwich recipe, a flavorful mix of veggies, deli meats, provolone, and zesty dressing in a crusty roll.

  • 1 large Italian roll or ciabatta bread
  • ½ cup shredded lettuce
  • ¼ cup cherry tomatoes, diced
  • ¼ cup red onion, finely chopped
  • ¼ cup banana peppers, sliced
  • 4 slices of salami
  • 4 slices of pepperoni
  • 4 slices of ham or capicola
  • 2 slices of provolone cheese
  • 2 tbsp mayonnaise
  • 1 tbsp red wine vinegar
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Slice the Italian roll lengthwise and remove some of the inner bread to make space for the filling. Toast lightly if desired.
  • In a large bowl, mix lettuce, tomatoes, red onion, banana peppers, mayonnaise, red wine vinegar, olive oil, Italian seasoning, salt, and pepper to create the chopped salad mixture.
  • Layer salami, pepperoni, ham, and provolone cheese evenly on the bottom half of the bread.
  • Spoon the chopped salad mixture over the meats and cheese.
  • Top with the other half of the bread, press lightly, and slice into portions. Serve immediately.

Notes

  • Add a drizzle of balsamic glaze for extra tang.
  • Use whole-grain or gluten-free bread if preferred.
  • Substitute deli meats with turkey or roast beef for a variation.
