  • 6 slices Irish bacon (or thick-cut bacon), chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups green cabbage, shredded
  • 4 medium potatoes, diced
  • 4 cups chicken or vegetable broth
  • 1 cup milk or heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon thyme
  • 2 tablespoons butter
  • 2 green onions, chopped (for garnish)

Instructions

  • In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside.
  • In the same pot, sauté onion and garlic in the bacon fat until soft.
  • Add the cabbage and cook for 3-4 minutes until slightly wilted.
  • Stir in potatoes, broth, salt, pepper, and thyme. Bring to a boil, then reduce heat and simmer for 20 minutes until potatoes are tender.
  • Stir in butter and milk (or heavy cream) and let it warm through without boiling.
  • Return the crispy bacon to the pot and stir.
  • Serve hot, garnished with chopped green onions.

Notes

  • For a thicker soup, mash some of the potatoes before serving.
  • Use ham instead of bacon for a different flavor.
  • Add a pinch of red pepper flakes for a slight kick.
